Whole Wheat Oat Bran Banana Muffins


I know it may seem like I have some kind of banana obsession with my post a few weeks ago being the banana coffee pie... but I don't! My family just buys bananas every week and they go bad so fast! I wanted to use the whole wheat flour I had bought previously for the pie, and based this recipe I found on SparkRecipes. It has whole wheat flour and oat bran, so it's yummy and healthy!

Time to prep: 15 min.
Time to Bake: 20 min.
Servings: 12 muffins




Ingredients:
- 1 cup whole wheat flour
- 1/2 cup oat bran
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1 tbsp cinnamon
- 1/2 cup brown sugar
- 1/2 cup apple sauce
- 2 eggs
- 3 ripe bananas

Other Materials:
- Muffin pan(s)
- Cooking spray
- Ice cream scoop

Directions:

1. In a bowl, combine and mix together:
     - whole wheat flour
     - oat bran
     - salt
     - baking powder
     - baking soda
     - cinnamon

Preheat the oven to 350 degrees
2. In another small bowl, mash the 3 bananas together
3. In a separate bowl, combine the brown sugar and apple sauce until the sugar is dissolved.
4. Add the 2 eggs in and mix well
5. Add the mashed bananas and mix
6. Slowly add the flour mixture in while stirring all the ingredients together
7. Spray the muffin pans with cooking spray. I like to use a paper towel to spread the oil thoroughly in each of the muffin cups.
8. Spoon the mixture into each of the cups. I like using an ice cream scoop to fill each of the cups; it's the perfect size! Fill each cup about 3/4 full.
9. Bake for 20 minutes. Before removing from the oven, insert a toothpick in the center of a muffin to see if anything sticks to it. If it does, bake for a few more minutes until the toothpick comes out clean. Then let cool for 10 minutes.

Super moist and yummy!

    I tried a half, taste like a very healthy banana bread. Pretty good.

  2. It's a wonder no one caught your ingredient error....
    1/2 tsp baking soda
    1/4 tsp baking soda

    I'm assuming that it's suppose to be,
    1/2 tsp baking POWDER

    1. Thanks phoeniX! my mistake- I have corrected it above. It was supposed to be:
      - 1/2 tsp baking soda
      - 1/4 tsp baking powder
