Coffee Jello!

























Coffee jello doesn't seem to be a common treat here in the US, but it's everywhere in Taiwan! and it's oh so good! They sell them in individual cups with a creamer to go with it, and it's such a delicious treat especially for the summer! This is a great snack or dessert that is SUPER low cal, I mean less than 10 calories?! and a fun alternative to traditional ice cream. (Recipe adapted from food.com)





Ingredients: 
- 2 envelopes (1/4 oz. each) of Knox unflavored gelatin
- 1/2 cup cold coffee
- 3 cup hot coffee
- 1/4 cup sugar (I used 12 packets of Truvia sugar)
- 1 pinch of salt
- Sugar Free Cool Whip (frozen)

Time to Prep: 12 min.
Time to Set: 2 hours
Servings: 7 - 8

Directions: 

1. Combine the 2 packets of gelatin powder with the cold coffee to separate the granules. Let this mixture sit for 10 minutes. It'll start to solidify a bit.








2. Add the hot coffee, sugar, and salt. Stir until all dissolved.












3. Pour into individual ramekins and leave in fridge for at least 2 hours.












4. When serving, add a dollop of cool whip or creamer.
